What can you do with one of these?

Pie?

Yeah – you could.

Lemon whoopie pies?

Oooh yum – definitely! But no.

Do you give up?

LEMON SQUARES!

That’s right. Lemon squares. Sweet. Tangy. Sour. Delicious. Yellow. Lemony. Delicious. AND REALLY EASY!!! I only make these treats in the summer so I was really happy to make these again!

There are two parts to this recipe, the lemon confection and the shortbread base. Each part is really quick to make, the biggest time suck is baking it.

Ingredients for Shortbread base:

– 3/4 cup butter (cut into pieces)

– 2 cups flour

– 1/2 cup light brown sugar

– 1/2 teaspoon salt

Steps:

1. Preheat your oven to 350 degrees F

2. Using a food processor, process all ingredients until it creates a consistency with small lumps.

3. Sprinkle mixture into 13 by 9 baking pan and press evenly to bottom with a spoon. You do not need to butter the pan.

4. Bake shortbread until golden brown (or 20 minutes)

5. Prepare lemon confection

Ingredients for Lemon Confection:

– 4 eggs

– 1 1/2 cups sugar

– 3/4 cup fresh lemon juice

– 1/3 cup flour

– Hot shortbread base

– Confectioners sugar for sprinkling

Steps:

1. Keep oven at 350. Just before putting in oven, turn down to 300.

2. Whisk together eggs and sugar.

3. Stir in lemon juice and flour.

4. Pour lemon confection over shortbread base and bake in oven for about 30 minutes

5. Cool completely and sift icing sugar over lemon bars

6. Store in fridge for best bars.

7. Enjoy!

I made these for my mom’s girl’s night out, which of course entailed some pretty things like pink napkins – which gave me inspiration for the display i made! Ain’t it pretty?
